Savory Meat Loaf (lighter recipe)

Makes: 6 servings

Ingredients
1-1/2 pounds ground turkey
1 cup fat-free (skim) milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped, or 1/8 teaspoon garlic powder
1/4 cup fat-free cholesterol-free egg product
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce

Directions
1. Heat oven to 350°F.

2. Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2×4 1/2×2 1/2 or 9×5×3 inches, or shape into 9×5-inch loaf in ungreased rectangular pan, 13×9×2 inches. Spread ketchup over top.

3. Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 180°F.

4. Let stand 5 minutes; remove from pan.

Smothered Mexican Lasagna

Ingredients
1-1/2 pounds ground turkey
1 bunch green onions, chopped
1 (1.25 ounce) package taco seasoning mix
2 cups water
1 (14.5 ounce) can diced tomatoes, undrained
1 (4 ounce) can diced green chile peppers, undrained
1 (15 ounce) container ricotta cheese
2 eggs
8 (10 inch) flour tortillas
1 (8 ounce) container sour cream
1/4 cup salsa

Directions
1. Preheat oven to 400 degrees F (200 degrees C). Place ground turkey in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in green onions, taco seasoning mix, water, diced tomatoes with juice, and green chiles with juice. Reduce heat to medium.

2. In a medium bowl, mix together ricotta and eggs. Place 2 tortillas in the bottom of a 9×13 inch pan. Spread 1/4 of the ricotta mixture on tortillas. Spoon 1/4 of the meat mixture over the cheese. Repeat layers until all is used up.

3. Bake in preheated oven for 20 minutes, or until sauce is bubbly. In a small bowl, mix together sour cream and salsa. Serve in a bowl on the side.

Cajun Turkey Burger Skillet

Ingredients
1 lb lean ground turkey
1 small red bell pepper, chopped (1/2 cup)
2 teaspoons Cajun seasoning
2 cups hot water
1 cup milk
1 box Hamburger Helper cheeseburger macaroni
1 cup shredded pepper Jack cheese (4 oz)

Directions
1. In 10-inch nonstick skillet, cook turkey, bell pepper and Cajun seasoning over medium-high heat, stirring frequently, until turkey is no longer pink; drain.

2. Stir in hot water, milk and contents of uncooked pasta and sauce mix pouches (from Hamburger Helper box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 13 to 15 minutes, stirring occasionally, until pasta is tender. Sprinkle with cheese.

Garlic and Ranch Turkey Burgers

Ingredients
1 pound ground turkey
1 (1 ounce) package ranch dressing mix
1 egg
3 cloves garlic, minced
1/4 cup Worcestershire sauce
seasoned salt and pepper to taste

Directions
1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

2. Knead together the turkey, ranch mix, egg, garlic, Worcestershire sauce, seasoned salt, and pepper in a bowl until evenly combined; divide into 4 equal portions and form into patties.

3. Cook on the preheated grill about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

Grilled Corn-Stuffed Turkey Burgers

Ingredients
1-1/4 lb ground turkey
1/2 cup plain bread crumbs
1 tablespoon canned chopped chipotle chiles in adobo sauce
1/2 cup Green Giant Valley Fresh Steamers Niblets frozen corn
2 tablespoons salsa
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
4 slices (3/4 oz each) Cheddar cheese
4 hamburger buns, split

Directions
1. Heat gas or charcoal grill. In large bowl, mix turkey, bread crumbs and chiles. Shape mixture into 8 patties, about 1/4 inch thick.

2. In small bowl, mix corn, salsa, cilantro and salt. Spoon about 2 tablespoons corn mixture onto center of 4 patties. Top with remaining patties; press edges to seal.

3. Place patties on grill. Cover grill; cook over medium heat 12 to 14 minutes, turning once, until thermometer inserted in center of patties reads 165°F. Top patties with cheese. Cover grill; cook about 1 minute or until cheese is melted. Serve on buns. Serve with additional salsa and chopped cilantro if desired.

Smoked Turkey Salad with Strawberries

Creamy Honey Dressing Ingredients
1 cup sour cream or plain yogurt
1/4 cup honey
2 tablespoons chopped fresh parsley
2 teaspoons ground mustard
3 teaspoons lemon juice

Salad Ingredients
1 lb smoked turkey or chicken, cut into 1/4-inch strips (4 cups)
8 oz provolone or Swiss cheese, cut into cubes
4 medium celery stalks, sliced (2 cups)
1 cup honey-roasted cashews
1 quart strawberries, cut in half (4 cups)
Salad greens, if desired
Cashews, if desired
Strawberries, if desired

Directions
1. In large bowl, mix all dressing ingredients until well blended.

2. Add turkey, cheese, celery and honey-roasted cashews; toss gently to coat. Add strawberries; carefully toss until evenly coated. If desired, serve on salad greens; garnish with additional cashews and strawberries.

Grilled Turkey Legs

Ingredients
1 (2 liter) bottle lemon-lime flavored carbonated beverage
2 tablespoons sugar
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 tablespoon black pepper
1 large sweet onion, sliced
4 turkey legs
2 tablespoons honey
1 tablespoon steak seasoning

Directions
1. Preheat an outdoor grill for high heat, and lightly oil grate.

2. In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).

3. Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, tuning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs.

Turkey Tortilla Cones

Ingredients
4 oz (half of 8-oz package) cream cheese, softened
4 flour tortillas for soft tacos and fajitas (6 inch)
1/4 cup salsa
4 lettuce leaves
4 oz smoked cooked turkey or ham, cut into strips
4 oz Cheddar cheese, cut into strips
4 small red bell pepper, cut into strips

Directions
1. Spread cream cheese evenly on top 2/3 of each tortilla. Spread salsa over cream cheese.

2. Place lettuce leaf on each tortilla. Top with turkey, cheese and bell pepper strips.

3. Fold up bottom 1/3 of each tortilla, then roll up to make cone shape with folded end on bottom. Keep tortilla in cone shape with toothpick. Serve with additional salsa if desired.

Best Ever Lasagna

Ingredients
6 long lasagna noodles, uncooked
1 package (1 lb.) ground turkey
2 tsp. bottled or fresh minced garlic
1/2 tsp. salt (optional)
1 jar (28 oz.) fat free or regular spaghetti sauce
1 container (15 oz.) light or part skim ricotta cheese
1/2 C. grated Parmesan or Romano cheese
1/4 C. chopped fresh basil or 1 Tbs. dried
2 C. (8 oz.) reduced fat shredded mozzarella or Italian blend cheese

Directions
1. Heat oven to 350 degrees F. Cook noodles according to package directions. Meanwhile, crumble turkey into a large skillet; add garlic and salt. Cook over medium heat until turkey is no longer pink, stirring occasionally. Add spaghetti sauce; simmer 10 minutes, stirring occasionally. Combine ricotta cheese, ¼ C. of the Parmesan cheese and basil; mix well. Spread ¾ C. spaghetti sauce mixture in bottom of a 9 x 13-inch baking dish. Layer half of noodles over sauce; spoon half of ricotta cheese mixture over noodles. Top with 1 C. sauce; sprinkle with 1 C. mozzarella cheese. Repeat layering with remaining ricotta cheese mixture, noodles, and sauce. Cover with foil; bake 50 minutes or until bubbly. Sprinkle remaining 1 C. mozzarella cheese and ¼ C. Parmesan cheese over lasagna; return to oven and continue baking 3 minutes or until cheese is melted.
