Hazelnut Toffee Crunch

Ingredients
1-1/2 cups milk chocolate chips
1/2 cup white sugar
1/2 cup butter (no substitutes)
1 1/2 cups chopped hazelnuts
2 tablespoons light corn syrup

Directions
1. Line a 9 inch square pan with enough aluminum foil to extend a little past the edges, and butter the foil.

2. Place chocolate chips in a glass bowl, and cook in the microwave, stirring every 20 to 30 seconds until melted and smooth. Spread the melted chocolate in the bottom of the prepared pan. Set aside in the refrigerator to cool while you make the candy part.

3. In a small saucepan over medium heat, combine the sugar, butter, hazelnuts and corn syrup. Bring to a boil, stirring to blend as the butter melts. Heat the mixture to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.

4. Pour over the cooled chocolate, and spread into an even layer. Return to the refrigerator to cool. When completely cool, break into bite size pieces, and store in an airtight container.

Salt and Garlic Bagel Chips

Ingredients
3 day old bagels
1/3 cup olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/4 cup freshly grated Parmesan cheese
salt and pepper to taste

Directions
1. Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.

2. Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet. In a small bowl, stir together the olive oil, garlic, Italian seasoning, and Parmesan cheese. Use a spoon or pastry brush to apply the flavored olive oil to the bagel chips. If you start to run out of the mixture, you can add a little bit more oil without sacrificing any flavor. Season the chips lightly with salt and pepper.

3. Bake for 15 to 20 minutes in the preheated oven, or until the chips are lightly browned. Remove from the oven and cool. The chips will become crispier as they cool.

White Candy Fantasy Clusters

Ingredients
4 cups Rice Chex cereal
2 cups pretzel sticks, coarsely broken
1 cup cashews, coarsely chopped
1/2 package (16-oz size) vanilla-flavored candy coating (almond bark)
1/2 cup semisweet chocolate chips

Directions
1. Spray with cooking spray or grease 13×9-inch pan. In large bowl, mix cereal, pretzels and cashews.

2. In 2-quart saucepan, melt candy coating over low heat, stirring constantly. Pour over cereal mixture, stirring until evenly coated. Press in pan; cool slightly.

3. In microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until chocolate can be stirred smooth (bowl will be hot). Drizzle chocolate over snack. Let stand about 30 minutes or until chocolate is set. Break into clusters. Store in airtight container.

Ingredients
2 tablespoons butter
2 tablespoons flour
2 cups beef stock
Salt
Freshly ground black pepper
2 pounds Idaho white potatoes, peeled and cut
1/2 pound fresh cheese curd

Directions
1. In a saucepan, over medium heat, combine the butter and flour. Stir until incorporated. Cook for 12 to 15 minutes for a dark roux. Stir in the stock. Season with salt and pepper. Bring the liquid to a boil. Reduce the heat to medium low and continue cooking for 15 to 20 minutes. Remove from the heat and keep warm. Peel the potatoes and cut fries, 4 inches by 1/2-inch. Bring a pot of salted water to a boil. Add the potatoes and blanch for 4 minutes. Remove, drain and cool completely. Fry the potatoes until golden brown. Remove and drain on paper towels. Season with salt and pepper. To serve, mound the fries into the individual (16-ounce) disposable cups. Spoon the gravy over the fries and crumble the cheese. Serve immediately.
