Ingredients
3 cups all-purpose flour
1 (.25 ounce) package active dry yeast
2 tablespoons vegetable oil
1 teaspoon salt
1 tablespoon white sugar
1 cup warm water (110 degrees F/45 degrees C)

Directions
1. Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. Spread out on a large pizza pan. Top as desired.

2. Bake at 375 degrees C (190 degrees C) for 20 to 25 minutes.

Chicago-Style Pan Pizza

Ingredients
1 (1 pound) loaf frozen bread dough, thawed
1 pound bulk Italian sausage
2 cups shredded mozzarella cheese
8 ounces sliced fresh mushrooms
1 small onion, chopped
2 teaspoons olive oil
1 (28 ounce) can diced tomatoes, drained
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon fennel seed
1/4 teaspoon garlic powder
1/2 cup freshly grated Parmesan cheese

Directions
1. Preheat the oven to 350 degrees F (175 degrees C). Press the dough into the bottom and up the sides of a greased 9×13 inch baking dish.

2. Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.

3. Add mushrooms and onion to the skillet; cook and stir until the onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder. Spoon over the mozzarella cheese. Sprinkle Parmesan cheese over the top.

4. Bake for 25 to 35 minutes in the preheated oven, or until crust is golden brown.

Grilled Pizza Wraps

Ingredients
2 tablespoons margarine, softened
8 (10 inch) flour tortillas
1 (16 ounce) package shredded Cheddar-Monterey Jack cheese blend
1/2 cup pizza sauce
4 ounces sliced pepperoni

Directions
1. Heat a large skillet over medium-low heat. Spread margarine over one side of a tortilla, and place it margarine-side down in the skillet. Spoon a tablespoon of pizza sauce onto half of the tortilla. Sprinkle 1/2 cup of shredded cheese over the sauce, and top with a few slices of pepperoni. Fold the clean half of the tortilla over the filling, and cook until golden on each side. Repeat with remaining tortillas.

Mexican Pizza I

Ingredients
1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
1/2 avocado, diced
1 tablespoon black olives, sliced

Directions
1. Heat the refried beans.

2. In a large skillet, brown the ground beef. Stir in the seasoning packet.

3. Preheat oven to 350 degrees F (175 degrees C).

4. Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.

5. Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.

6. Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

Double Crust Stuffed Pizza

Ingredients
1-1/2 teaspoons white sugar
1 cup warm water (100 degrees F/40 degrees C)
1 1/2 teaspoons active dry yeast
1 tablespoon olive oil
1/2 teaspoon salt
2 cups all-purpose flour
1 (8 ounce) can crushed tomatoes
1 tablespoon packed brown sugar
1/2 teaspoon garlic powder
1 teaspoon olive oil
1/2 teaspoon salt
3 cups shredded mozzarella cheese, divided
1/2 pound bulk Italian sausage
1 (4 ounce) package sliced pepperoni
1 (8 ounce) package sliced fresh mushrooms
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped

Directions
1. Combine the white sugar and the warm water in a large bowl or in the work bowl of a stand mixer. Sprinkle the yeast over the warm sugar water, and let stand for 5 minutes until the yeast softens and begins to form a creamy foam. Stir 1 tablespoon olive oil into the yeast mixture.

2. Stir 1/2 teaspoon salt into the flour. Mix half of the flour mixture into the yeast water, and stir until no dry spots remain. Stir in the remaining flour, a 1/2 cup at a time, mixing well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes (or mix with dough hook in stand mixer).

3. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a light cloth, and let rise in a warm place until doubled in volume, about 1 hour.

4. Combine the crushed tomatoes, brown sugar, garlic powder, 1 teaspoon olive oil, and salt in small saucepan. Cover pan, and cook over low heat until tomatoes start to break down, about 30 minutes.

5. Preheat an oven to 450 degrees F (230 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Cut the dough into 2 equal pieces. Roll one piece into a 12 inch thin circle. Roll the other half into a thicker, 9 inch circle.

6. Place the 12 inch dough round into an ungreased 9 inch springform pan. Sprinkle dough with 1 cup of cheese. Shape sausage into a 9 inch patty and place in pan on top of the cheese. Layer pepperoni, mushrooms, green pepper, red pepper, and remaining cheese on top of sausage patty. Top with the 9 inch dough round and pinch edges to seal. Cut several 1/2 inch vent holes in the top crust. Spread sauce evenly on the top crust, leaving a 1/2 inch border at the edges.

7. Bake pizza in the preheated oven until the crust is set, the cheese is melted, and the sausage is cooked through, 40 to 45 minutes. Let hot pizza rest for 15 minutes before cutting into wedges and serving.

“Healthified” Homemade Pizza

Crust Ingredients
1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt 
1/2 cup fat-free (skim) milk
2 tablespoons olive oil

Topping Ingredients
1-1/2 cups shredded reduced-fat mozzarella cheese (6 oz)
1 can (14.5 oz) organic diced tomatoes, drained
1 cup fresh baby spinach leaves, coarsely chopped
1 cup yellow or green bell pepper strips
1/4 teaspoon dried oregano leaves
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 tablespoons freshly shredded Parmesan cheese

Directions
1. Heat oven to 400°F. In medium bowl, mix flour, baking powder and salt. Stir in milk and oil until soft dough forms. (If dough is dry, stir in 1 to 2 tablespoons additional milk.) On lightly floured surface, knead dough 10 times. Shape dough into ball. Cover with bowl; let stand 10 minutes.

2. Place dough on ungreased cookie sheet; flatten slightly. Roll out to 12-inch round. Bake 8 minutes.

3. Sprinkle mozzarella cheese over crust; top with remaining topping ingredients. Bake 15 to 20 minutes or until crust is light golden brown and cheese begins to brown. Cut into wedges to serve.

“Healthified” Greek Chicken Pizza

Crust Ingredients
1 package regular active dry yeast
3/4 cup warm water (105°F to 115°F)
2 cups whole wheat flour
2 teaspoons sugar
1/2 teaspoon salt
1 tablespoon olive oil
1 tablespoon cornmeal

Topping Ingredients
3/4 cup organic pizza sauce (from 15-oz can)
1 cup shredded reduced-fat mozzarella cheese (4 oz)
1 cup shredded cooked chicken breast
2 medium plum (Roma) tomatoes, thinly sliced
1/4 cup pitted kalamata olives, halved
1/2 cup crumbled feta cheese (2 oz)
1/4 cup chopped fresh basil leaves

Directions
1. In medium bowl, dissolve yeast in warm water. Stir in flour, sugar, salt and oil. Stir with fork until dough forms. Turn dough onto lightly floured surface; knead 12 times. Return to bowl. Cover; let rest 20 minutes.

2. Heat oven to 425°F. Spray large cookie sheet with cooking spray; sprinkle with the cornmeal. Gently push fist into dough to deflate. Spray hands with cooking spray; press dough into 15×10-inch rectangle on cookie sheet.

3. Bake 8 minutes. Spread pizza sauce over partially baked crust to within 1/2 inch of edge. Top with mozzarella cheese, chicken, tomatoes, olives and feta cheese.

4. Bake 10 to 15 minutes longer, or until cheese is melted and edges of crust are golden brown. Sprinkle with basil.

Husband-Friendly Chicken Pizza

Ingredients
1/4 cup olive oil
1 red onion, sliced
6 slices bacon
1 (10 ounce) container refrigerated pizza crust
3/4 cup barbeque sauce
2 cooked chicken breast halves, shredded
1/4 cup crumbled Gorgonzola cheese
1 jalapeno pepper, seeded and diced, or to taste (optional)
1 tablespoon paprika
1 tablespoon garlic powder
2 cups shredded mozzarella cheese

Directions
1. Heat the oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.

2. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble when cool.

3. Preheat an oven to 425 degrees F (220 degrees C). Grease a baking sheet.

4. Press the refrigerated pizza crust onto the baking sheet to fit the size of the pan. Spread the barbeque sauce evenly over the dough, and sprinkle with the shredded chicken, caramelized onion, bacon, Gorgonzola cheese, and diced jalapeno pepper. Season with paprika and garlic powder. Top with the shredded mozzarella cheese.

5. Bake in the preheated oven until the cheese has melted and is bubbly and the pizza dough is golden brown on the bottom, 15 to 17 minutes.

BBQ Pork Pizza

1 (13.8 ounce) package refrigerated pizza dough
1 (18 ounce) container barbequed pulled pork
1/4 red onion, thinly sliced

Directions
1. Preheat oven to 425 degrees F (220 degrees C). Grease a 9×13 inch baking pan.

2. Roll the dough out into the prepared pan. Top the dough with the barbecued pork. Sprinkle with the red onions, and layer on the dill pickle slices. Sprinkle mozzarella cheese evenly over the top.

3. Bake in the preheated oven until crust is golden and cheese is melted, about 18 minutes.

6 ounces (1-1/2 cups) Chedarella Cheese, shredded
1/2 cup cooked ground pork sausage
1/4 cup chopped tomato
1 tablespoon sliced green onion

Directions
1. Heat oven to 425°F. Place tortillas onto ungreased baking sheet. Top each with 1/2 cup shredded cheese and 1/4 cup sausage to within 1/2 inch of edge. 

2. Bake for 6 to 8 minutes or until cheese is melted and bubbly. Top with tomato, green onion and remaining cheese. Cut into wedges. Serve immediately.
