Tangy Honey Glazed Ham

Ingredients
1 (10 pound) fully-cooked, bone-in ham
1-1/4 cups packed dark brown sugar
1/3 cup pineapple juice
1/3 cup honey
1/3 large orange, juiced and zested
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves

Directions
1. Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.

2. In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, Dijon mustard, and ground cloves. Bring to a boil, reduce heat, and simmer for 5 to 10 minutes. Set aside.

3. Bake ham in preheated oven uncovered for 2 hours. Remove ham from oven, and brush with glaze. Bake for an additional 30 to 45 minutes, brushing ham with glaze every 10 minutes.

Heavenly Potatoes and Ham

Ingredients
5 pounds red potatoes, quartered
1 (16 ounce) container sour cream
1/2 cup butter
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1/4 cup chopped green onion
2 cups cooked, chopped ham
salt and pepper to taste
1-1/2 cups Parmesan cheese flavored bread crumbs
1/4 cup melted butter

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.

2. Place potatoes in a large pot of water, and bring to a boil. Boil until slightly tender, about 12 minutes. Drain, and transfer to a large bowl.

3. Mix sour cream, butter, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.

4. Bake 30 minutes in the preheated oven.

Apricot Brown Sugar Ham

Ingredients
1 (10 pound) fully-cooked spiral cut ham
2/3 cup brown sugar
1/3 cup apricot jam
1 teaspoon dry mustard powder

Directions
1. Preheat the oven to 275 degrees F (135 degrees C).

2. Place the ham cut side down onto a sheet of aluminum foil. I like to put the shiny side up. Mix together the brown sugar, apricot jam and mustard powder in a small bowl. Brush onto the ham using a pastry or barbeque brush. Reserve any leftover glaze. Enclose the foil around the ham and place on a rimmed baking sheet.

3. Roast for 2 hours in the preheated oven, or if you ham is a different size, figure 14 minutes per pound. Apply the remaining glaze 20 minutes before the ham is done.

Scalloped Potatoes and Ham

Ingredients
1/2 cup chopped onion
1-1/2 cups fat-free milk
3 tablespoons all-purpose flour
1/8 teaspoon ground black pepper
1 teaspoon snipped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 medium round red potato, cut into 1/4-inch-thick slices
1 medium sweet potato, peeled and cut into 1/4-inch-thick slices
1 medium turnip, peeled and cut into 1/4-inch-thick slices
1/4 cup water
8 ounces low-fat, reduced-sodium cooked boneless ham, cut into thin strips

Directions
1. Preheat oven to 350 degrees F. For sauce: In a medium saucepan, cook onion in a small amount of boiling water over medium heat for 3 to 5 minutes or until tender. Drain; return to pan. In a screw-top jar, combine milk, flour, and pepper; cover and shake until well mixed. Add milk mixture to saucepan. Cook and stir over medium heat until thickened and bubbly. Stir in rosemary.

2. Meanwhile, in a 2-quart microwave-safe baking dish, combine potatoes, turnip, and the 1/4 cup water. Cover with vented plastic wrap. Microwave on 100% power (high) about 8 minutes or just until vegetables are tender. Carefully drain in a colander.

3. In the same 2-quart baking dish, layer half of the ham, half of the potato mixture, and half of the sauce. Repeat layers. Sprinkle with paprika. Bake, uncovered, about 30 minutes or until heated through. Let stand for 10 minutes before serving.
