Makes: 30 appetizer meatballs
Ingredients
1 pound lean ground beef
1 medium onion, chopped (1/2 cup)
1/3 cup dry bread crumbs (any flavor)
1/4 cup milk
1 egg
1 teaspoon salt
1/8 teaspoon pepper
1 cup chili sauce
1/2 cup cold water
1 jar (12 ounces) tomato pasta sauce (any variety)
1 teaspoon yellow mustard
Directions
1. Heat oven to 400ºF.
2. Mix ground beef, onion, bread crumbs, milk, egg, salt and pepper. Shape mixture into thirty 1-inch balls. Place in ungreased rectangular pan, 13×9×2 inches.
3. Bake uncovered about 15 minutes or until no longer pink in center and juice is clear. (To serve immediately, continue as directed in step 5–except decrease simmer time to 15 minutes.)
4. Place meatballs on ungreased cookie sheet. Freeze uncovered about 20 minutes or until firm. Place partially frozen meatballs in heavy plastic bag or freezer container. Seal, label and freeze no longer than 3 months.
5. About 25 minutes before serving, mix chili sauce, water, pasta sauce and mustard in 2-quart saucepan. Add meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer about 20 minutes or until meatballs are hot.

1/4 cup grated Parmesan cheese
1 teaspoon paprika
24 slices roma (plum) tomatoes
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
Directions
1. For the hummus, place the drained garbanzos, lemon juice, garlic, cumin, and olive oil in a food processor. Process until blended, about 1 minute. Refrigerate overnight. Bring to room temperature before making the bruschetta.
2. Spread a teaspoon of butter on each slice of ciabatta; sprinkle with a teaspoon of Parmesan cheese. Place under broiler until slices are golden, about 3 minutes. Remove from oven and spread with a generous tablespoon of hummus. Sprinkle with a dusting of paprika.
3. To serve, top with tomato slices, feta cheese, and a sprinkle of the oregano and garlic powder.

1 tablespoon water
2 tablespoon honey mustard
1 package (16 ounces) turkey or beef kielbasa, cut into 8 pieces
Directions
1. Thaw the pastry sheet at room temperature for 40 minutes or until it’s easy to handle. Heat the oven to 375°F. Lightly grease or line a baking sheet with parchment paper. Beat the the egg and water in a small bowl with a fork.
2. Unfold the pastry sheet on a lightly floured surface. Roll the sheet into a 13 x 9-inch rectangle. Brush the pastry with the honey mustard. Cut the pastry into 8 (about 4 1/2 x 3-inch) rectangles.
3. Place 1 piece kielbasa in the center of each pastry rectangle. Brush the edges with the egg mixture. Fold the pastry over the kielbasa and press the edges to seal. Place the wraps seam-side down on the baking sheet. Brush the wraps with the egg mixture.
4. Bake for 25 minutes or until the wraps are golden. Remove from the baking sheets and cool for 5 minutes on a wire rack. Serve with additional honey mustard for dipping.

2. Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 15×12-inch rectangle. Cut into 20 (3-inch) squares. Place about 1 tablespoon cheese mixture in the center of each pastry square. Top each with 1 olive piece, if desired. Brush the edges of the pastry squares with the egg mixture. Fold the pastry over the filling to form triangles. Crimp the edges with a fork to seal. Place the filled pastries onto a baking sheet. Brush the pastries with the egg mixture and sprinkle with the chili powder.
3. Bake for 15 minutes or until the pastries are golden. Serve warm or at room temperature.
